looking at the first picture, it looks like you are missing the 25Assist Libs folder, that must be in the same location as 25Assist.exe.
Download 25Assist again.

What are the locations of:
25Assist.exe
AssistServerManager.exe
For instance, here is where I have mine.
D:\Data\0. Assist\TestClient\25Assist.exe
D:\Data\0. Assist\TestServers\AssistServerManager.exe
The reason I ask is that I suspect that your files are mixed together, sharing location.
Another possibility, since you say you copied files from client to server folder, is that your firewall/router is not allowing all the traffic trough. All the files of the server should automatically be downloaded.

I don't know if the issue fixed it self by the time I got to verify the problem, at the moment I write this, it works.
When I tried the channel we use to login using BT's information, I see that it does work as it should when I try with my own account. Is it problems with new accounts?

Map updates are handled independent from client/server updates.

If I were in your situation, and had verified that the Port forwarding was setup correctly, I would disable Windows firewall, I would then temporary disable the routers firewall, just a few minutes to test if it works.
Don't forget to re enable the firewalls after your test.
There is also tools that you can setup with a friend, where you each run a program that tests the ports/and protocol you decide, in this case UDP, 1716/1717
