Title: Mac & Cheese
Post by: Spanky on Wednesday, April 07, 2010, 00:03:04 AM
Forget that stovetop crap, this is the real deal.

Ingredients:
1lb Macaroni (or other similar noodles)
1lb Shredded Cheddar Cheese
Breadcrumbs
Butter
1 cup Milk
1 cup Half & Half
Sea Salt (<3 the coarse grind)

Instructions:
Get a flat pan, deeper ones may take longer to cook and may have more moisture. I prefer some crunch so I go with a thinner glass pan.
Butter the pan. A tablespoon or so is good, really depends on pan size.
Put some breadcrumbs in the pan so it sticks to the butter. This is a nifty trick and you'll see how clean the pan is when you're done.
Toss some cheese on the breadcrumbs, just enough so that it sticks when it melts.
Cook your noodles half of what it says on the package, they will cook the rest of the way in the oven and absorb some moisture as well.
Layer noodles and cheese in the pan, save some cheese but use all the noodles.
Pour the milk and half & half in.
Shake some breadcrumbs on the top with some sea salt.
Put the rest of the cheese on.
Cover with alumnium foil and put in the oven at 350-375F depending on elevation, pan type and crunchy vs gooey you like.

45 Minutes after it's in, take the foil off and you'll see something like this:

Keep it in for another 15 minutes or so until it looks a bit more done like this:

Serve it up! I <3 mine with a lot of coarse grind sea salt, it makes all the difference:

Haha, there's really only 2 things I use that salt on a lot and this is one, the other is pork. It just tastes so much better. At least it's good salt.
